Serves 2 to 4
Canned black and pinto beans work great in this recipe. Just make sure to rinse and drain them well to remove any excess salt.
Ingredients
4 (8-inch) whole wheat tortillas
1/2 cup cooked and drained black beans
1/2 cup cooked and drained pinto beans
1 1/2 cups shredded cheddar cheese
1/4 cup fire-roasted salsa
1/4 cup chopped cilantro
Method
Warm a heavy skillet over medium-high heat. Place one tortilla in the skillet and top with half of the black beans, pinto beans, cheese, salsa and cilantro. Press another tortilla on top.
Cook 2 to 3 minutes, then carefully flip the quesadilla to brown the other side for another minute or two. Remove to plate and repeat with remaining black beans, pinto beans, cheese, salsa, cilantro and tortillas. Cut quesadillas into wedges and serve.
